The large increase in demand for dried fruit, due to the shift of consumers to healthy snacks, has led farmers to grow fruits that are eaten fresh and dried.
Demand for dried fruit is high in Central and Northern European countries, where fruits and vegetables are not available throughout the year, while Turkey occupies a dominant position in the export sector, mainly dried figs and sultanas.
In Greece, the main types of fruit that are dried and are widely known are fig, plum, apricot and raisins. While peaches, apples, pears and doughs are less dried.
