The magic analogy 1:2:3:4 is common knowledge for those who wish to make a quick and easy dessert. Semolina pudding is super delicious, suitable for vegans and those who fasten and requires only 40 minutes of your precious time.

INGREDIENTS (for 8-10 people)

  • 1 Cup of olive oil or other vegetable oil
  • 2 cups of coarse semolina
  • 3 cups of sugar (white or brown)
  • 4 cups of water
  • 2 cinnamon sticks
  • 2 cloves
  • 75 grams chopped almonds
  • 75 grams chopped walnuts
  • 50 grams raisins
  • Zest from one orange
  • Cinnamon Powder for serving


In a deep saucepan, add the oil and heat it over medium heat. Add the coarse semolina and cook, over low heat, stirring the mixture continuously to prevent sticking for about 15 minutes. The semolina is cooked when the grains get a golden-brown colour. At the end, add to the semolina mixture the nuts, the raisins and the orange zest. In the meanwhile, in a smaller pan, add the water, the sugar, the cinnamon sticks, and the cloves. Boil for 5 minutes, then lower the heat and simmer gently. Remove the cinnamon and cloves from the syrup before pouring. Then, remove the semolina pot from the heat and carefully pour the hot syrup to the semolina mixture while stirring carefully, because the mixture is too hot. Lower the heat and put the semolina pot again on it. Then put the lid and leave it rest for 2-3 minutes, until the semolina absorbs all the liquid. Transfer the mixture into a cake mold while it is still hot.  Allow the pudding to cool for 30 minutes and turn it out. To serve, sprinkle with cinnamon and some more chopped nuts.
